Shortbread cookies

So I recently discovered on Amazon a super deal on a Kindle book of baking recipes called ‘Tartine‘. $2.99 for SO many new recipe ideas, jaw dropping photos, and hidden secrets?! Yes please!

Just made these today. I’ve been a bit under the weather so didn’t feel like going out for new ingredients – so this recipe was perfect. Just flour, corn starch, sugar, butter, and salt as below. Cream butter with salt and sugar then add the dry ingredients – mix to crumbly texture. Pat into a 6×10 buttered pan (I just used our Creuset). Heat oven to 325 and bake for 30-35 min. Just until the edges start to brown. Cool. Once top is warm, not hot, sprinkle the superfine sugar on top and split into 1 inch by 2 inch squares. Remove from pan after completely cooled!

2 sticks of butter – well softened ‘like Mayonnaise’s

1/2 teaspoon salt

1/3 granulated sugar

1.75 cups flour

1/2 cups corn starch 

1/4 superfine sugar (granulated sugar spun in my magic blender!)
