Braised turkey legs 

Sear turkey legs in olive oil. Then toast diced carrots, celery, and parsnips. Deglaze the pan with a splash of wine then back in the pot go the turkey legs. Place the pot in the oven at 400 F for ~1 hour or until internal temp of legs reaches 180F. Reduce the sauce on the stove top.
